Peach and Cucumber Salad with Honey Lemon Vinaigrette Dressing

I know it probably looks like the majority of recipes I post are salads, but it has been such a HOT summer already and a salad is so refreshing on a humid summer day — especially one with a citrus based dressing! And on the plus side it’s peach season. Whatever peaches you have left from not grilling or just having as a snack, try in a salad. They add a sweet and flavorful punch as well as compliment whatever vegetables you’ve also added to your greens.

Peach and Cucumber Salad with Honey Lemon Vinaigrette Dressing

A sweet citrus salad that's perfect to enjoy in the middle of a hot summer.

  1. 2 cups romaine lettuce, chopped
  2. ½ cup cucumber, diced
  3. 1 peach, thinly sliced
  4. 2 pieces cooked bacon, chopped
Honey Lemon Vinaigrette
  1. 1 tsp honey
  2. 3 TB fresh lemon juice
  3. ½ tsp lemon zest, minced
  4. 2 TB extra virgin olive oil
  5. ½ tsp thyme
  6. pinch of salt and pepper
  1. Using a small mixing bowl, add all vinaigrette ingredients and whisk well. Set aside.
  2. In a larger bowl, add all salad ingredients. Drizzle vinaigrette overtop and enjoy.

21DayFix – Week 1, Plan-A Menu

With summer only 50 something days away, I thought no perfect time than now to clean up my diet and tone my body. I am pretty good at finding clean-eating meals to cook throughout the week but I wasn’t very experienced in portion control. Luckily for me, my husband had purchased the 80 Day Obsession Challenge Pack! So in preparation for the next 80DO challenge to start at the end of this month, I thought I’d use those cute little color containers and start the 21DayFix since I had 21 (well, 23 to be exact) days to practice my diet.

My BB coach directed me to Fixate Cooking, a program on BeachBody On Demand which offers up a large variety of recipes that center around portion control. This was a tremendous help in understanding what I can and cannot eat throughout the day for my specific meal plan. Plus, new recipes are always exciting to try out! Planning out to get the right amount of containers can be a little time consuming, but what meal-planning isn’t? 

The meals below are what I had for my first week. I’m on Plan A, and each recipe was delicious! I would highly recommend them if you’re a Plan A as well and are looking to try something new. M1 – Breakfast: PBJ Shakeology
When I first started 21DayFix, I was most excited about Shakeology. I have done a few beachbody programs in the past and have tried a couple of the shakeology flavors and strawberry was hands down my favorite. I had originally mostly made it as a Strawberry Banana shake but I wanted to experiment a little and see what else I could throw together that tasted delicious as well as was healthy for me. Of course I turned to Pinterest for this, like most of us do for anything. That’s where I found a recipe for this PBJ shake. Now if you love a peanut butter and jelly sandwich, it’s highly likely you’ll like this shake. Throw in some banana and the flavor is even more delicious.

1 Strawberry Shakelogy Packet
1 banana
1T peanut butter or almond butter
8oz water
3-4 ice cubes
(1 red, 1 purple, 1 blue)

M2 – Snack 1: Carrots and Celery.
(1 green)

M3 – Lunch: Overstuffed Turkey Sandwich 
(1 green, 1 red, 1 yellow)

M4 – Snack 2: 1 clementine
(.5 purple)

M5 –  Dinner: Meat Taco Meat (Day 1 and 2)

M5 – Dinner: (Day 3) Low-Carb Japanese Noodle Bowl
(1 green, 1 red, .5 yellow, 2 oil)

M5 – Dinner: (Day 4) Pineapple Fried Rice
(.5 green, .5 purple, .5 red, 1 yellow, .5 orange, 2 oil)

M5 – Dinner: (Day 5 and 6) Steak Fajitas

Fit & Chic Over Summer Heats


Everybody – especially ladies – do their best to transform their bodies and looks before summer into something that’s perfect for them so that they can show off their nice appearance, while the weather dictates more revealing clothes and spending time at the beach. Still, many people pay attention to their health and fitness few months before the summer season while they completely forget about balanced diet, proper skin care and fitness routine when the summer is finally there. This often results in poor skin and hair condition, and your figure starts changing (and not for the good) as the summer is near its end. If you want to keep your good looks and make sure that your previous hard work will be visible for many months and seasons to come, you can beat the summer heat and adjust your healthy habits to the weather.

Drink plenty of water

Let’s get the most annoying advice out of the way first. You’re probably tired of reading about benefits of water in every possible beauty article, but ask yourself the most important question – why is it always there? Proper intake of water during summer is essential if you want to keep your body energized and hydrated. There’s no skincare product that can transform your skin into smooth and moisturized canvas if you don’t hydrate it from the inside first. With lack of water, your skin can become dry and patchy. So, make sure you drink a lot of water while at home, and bring a bottle with you when you go out.

Stay fit with continuous exercise

If you think that having to work out constantly in order to stay fit is bad news, wait till you hear the good news. Once you put a lot of effort into reaching your desired fitness skill and body shape, you don’t have to keep exercising like crazy in order to stay fit. Fifteen minutes per day is more than enough if you want to keep things the way they are, as long as you do it regularly. Since summer heat can pose a lot of problems when running, or even going to the gym, you can exercise at home instead. There are many tutorials that can help you. Also, you can make great use of summer fun and engage in some water sports that will keep you fit and healthy.

Lead a balanced diet

We all know how fun it is to drink one or two cocktails at beach parties and grab a bite at fast food restaurants after long summer nights. Therefore, make sure to keep your diet balanced. For example, smoothies are a great way to start your day and get enough nutrients and energy. You can also make them for dinner. Getting your fill of vitamins is especially important if you are exercising, or if you have to spend a lot of time in the sun. Therefore, be smart with your smoothie ingredients and add some organic pea protein powder in order to get the most benefits out of this tasty meal.

Keep protecting your skin and hair with products

If you think it’s enough to use sunscreen when you go out and completely neglect any other skin and hair care routine, you’ll face a lot of problems. While sunscreen is absolutely necessary, you still have to make time to clean your face in the morning and before bed, use restoring and moisturizing creams and give your hair some special rich treatments from time to time. Also, don’t forget your skin. Because of the heat, it’s more prone to dryness, so applying some body lotion after a shower will keep it healthy and moisturized. If summer weather makes it unbearable for you to have any product on your body, use in-shower lotions.

Staying fit and chic during summer heat is more than possible if you start looking at the whole process as a new lifestyle, instead of a troublesome effort for a short-term effect. Embrace the habit of looking and feeling great!


Summer Berry Watermelon Salad

It wouldn’t be summertime without a fruit salad.



Summer Berry Watermelon Salad
Serves 4
A delicious fruit salad to enjoy during a hot summer day.

  1. 4 cups watermelon, chopped into cube shapes
  2. 1 pint blueberries
  3. 1 pint raspberries
  4. 1 pint strawberries, quartered
  5. 1 tablespoon fresh lime juice
  1. Add all ingredients in a large bowl, mixing well. Serve slightly chilled.
